Scrape, rinse, sort, and load dirty dishes, glassware, flatware, pots, and pans into commercial dishwashing machines (or wash by hand when needed, especially for fragile items, large cookware, or wooden boards).
Unload clean items, dry them if required, and store them properly so cooks and servers can access them quickly.
Clean and sanitize kitchen tools, small appliances (mixers, blenders, coffee machines), cutting boards, and work surfaces.
