Summary / purpose

Responsible for culinary direction, hiring/training, purchasing/cost control, and achieving financial/operational targets,  Control food, labour and operating costs; prepare and manage kitchen budgets and forecasts.
Approve and manage supplier relationships, negotiate pricing, and ensure quality/consistency of deliveries.
Develop recipe specifications, portion controls, and plating standards to ensure consistency.
Monitor inventory, implement par levels, minimize waste, and oversee storeroom organization.
Coordinate with front-of-house management to optimize service flow and resolve guest issues.

Core skills & Qualification includes;  Culinary degree or diploma preferred; equivalent , Strong leadership, communication, and people-management skills.
Advanced culinary and plating technique knowledge across relevant cuisines.
Financial acumen: food cost, labor cost, margin management.
Food safety knowledge and certification (HACCP, ServSafe or local equivalent).
Organizational skills: scheduling, inventory systems, SOP creation.
Crisis and time-management skills; works well under pressure.
